Bigalora was founded by chef Luciano Del Signore, who learned his trade growing up in his Italian parent’s pizza restaurant. The pizzas here are made from a unique fermented pizza dough known as biga, and we can confirm that the results are delicious. Bigalora’s pizza menu is split into two – red and white pizzas, which are with or without tomato.
There’s an excellent selection of small plates, including wood-roasted olives and prosciutto e grana. Crispelli’s Bakery & Pizzeria
Crispelli’s has a great combination of tradition and modernity. The pizzas are made at 700 degrees in their stone-fired oven, which you can watch being made in front of you by their artisan Pizzaiola pizza maker. We love watching the Pizzaiola at work, and the resulting thin-crust gourmet pizzas are well worth the visit.
The restaurant has many soups and salads, including a soup and salad combo for those who wish to try both. As you would expect from a bakery, their sandwiches are made from freshly baked bread, with a side of pickle, kettle chips, salad, or french fries. PizzaPapalis
PizzaPapalis was started by Joe Sheena, who visited Chicago in the 1980s and tried the Chicago-style deep-dish pizza there. He liked it so much that he started PizzaPapalis. Every pizza is made from Wisconsin cheese, Italian tomatoes, and a custom flour grain from a small mill in Kansas. The deep-dish pizzas here are great, and the restaurant also has thin-crust and Detroit-style pizzas.
The restaurant has some excellent sandwiches, with both classic subs and ciabatta sandwiches to tempt your tastebuds. Their wings are really good – you can get them regular or boneless, and there are several different sauces to choose from.
